We're Moving.......

Big changes are going to be happening on my blog over the next
month.
You may have already noticed the name change!!!

The fact that I registered my domain on my own and made it functional is a huge accomplishment for me. There are still days when this whole blog world baffles me as far as the technical crap goes. I may have watched a youtube tutorial for GoDaddy
domain installation to assist me.

I've also decided on the amazing Aubrey Kinch
to give my blog a much needed makeover! Her portfolio is drool worthy.

I added some new pages that will help direct my readers in the right direction! They are in "coming soon" condition and will be up and running quickly!

I'm so excited for this new makeover! Please be patient
with my appearance while I'm under construction!!

What I'm Loving Wednesday

  • I'm still obsessed with this stuff and using it as shampoo to boot. It says you can on the bottle...ha.

  • I am slowly convincing my self that these expensive, pretty, little things belong on my tree this year. They are $10.50 each from Pottery Barn

  •  I love that Graycie thinks that the Bump Nest pillow was for her.

  • And most of all? I love that I will be in the Caribbean in 2 weeks (with out a base tan, but who cares?)

 Happy Wednesday!!!

Baked Tortellini

I found this recipe on Pinterest and I'm sooo happy that I went with it.
A few things turned me on to this recipe....
1. CHEESE!!!
2. I had all of the ingredients and I think almost everyone probably will.
3. Cook and prep time about 30 minutes!
and
 4. An Alfredo sauce that doesn't require a rue/rew/ru? (sticky, gooey, can be grainy, floury, messy and will burn if you don't watch it, temperamental base for most Alfredo sauces.)

Ingredients
20 Ounce pack of tortellini
I used bertolli
2 chicken sausages (can leave out)
4 oz Mozzarella Cheese
Garlic Alfredo sauce (recipe below)

Directions:
  1. Preheat oven to 350 degrees. Get out a 2 quart baking dish and set aside.
  2. Boil tortellini according to package directions, and set aside. Dice up chicken sausage and brown in pan until cooked. I like to freeze my links so that they are easier to cut.
  3. Spread a 1/4 cup of alfredo sauce on bottom of baking dish.
  4. In a large bowl, mix your tortellini, sausage and the remaining alfredo sauce. Poor your pasta mixture into your baking dish. Top with mozzarella cheese, and bake for approximately 20 minutes or until cheese is melted and bubbly. Turn your broiler on, and while watching, broil for a few minutes to get your cheese a little crispy.
  5. Enjoy!
Garlic Alfredo Ingredients
  • 4 T butter
  • 2 cloves garlic, finely minced
  • 4 oz. cream cheese, softened and cut into 1/2-inch cubes
  • 1 cup milk (I used 1%))
  • 3 oz. Parmesan cheese, grated (not the powdered kind!)
  • 1/2 tsp black pepper
  • 1 pinch Kosher salt

Directions:
  1. Melt butter in a medium saucepan over medium heat. Add garlic and cook 2 minutes.
  2. Add cream cheese and whisk until smooth. This part may look a little curd-ily but don't stress, somehow it all works out in the end. Slowly add in milk, whisking constantly until smooth.
  3. Stir in parmesan and pepper. Season with kosher salt, if needed.
  4. Remove from heat when desired consistency is reached.

Update...Why I haven't been blogging..........

I will explain my absence in a picture .....
We are about 10 weeks pregnant and couldn't be more excited!!!
Due to fact that last August we were pregnant and the fetus stopped growing around 8 weeks, I was able to get a super early ultrasound!!!
I thought that there were 2 but one is just yolk (goes to show you how much I know about all of this!)
Needless to say that I haven't been blogging because I have been sleeping. Whenever I can. Wherever and all day.
I've recently been getting sick at night after I eat dinner, so I've moved dinner up to 4 pm (YAY early bird specials).
I have a obsession with sour patch kids right now, they are like crack. J bought me these two huge pounder bags.
Here is a current picture.....because this is what all the other pregnant bloggers do.

I haven't gained any weight so far and my next appointment is December 2!!!
J has been great, he's been trying to understand why I'm always nappy or barfing!
We will find out right before Christmas what we are having!!! We are so excited and I am looking forward to sharing my pregnancy with my readers :)
Happy Monday!
